Though many people think of crock-pot meals as cold weather meals, I love using the crock-pot in the summer. I do not want to be tied down to the kitchen when the weather is great. So, since it is getting warmer, here is a simple and satisfying meal to put in your crock-pot this week. Here is my version of a white bean and sausage stew.
The original recipe can be found here, but I have made few modifications just to make this a very simple one-pot dinner.
White Beans and Sausage
4 cloves garlic diced
14 oz. high quality smoked kielbasa
4 14oz cans of white beans, drained and rinsed
1 cup of diced onion
1 can diced tomatoes
1 cup chicken stock
1 tsp thyme
1 tsp oregano
6 cups of baby spinach
Salt and Pepper
1. Diced the onion, sausage, and garlic. Add to a skillet over medium-high heat and allow everything to brown and soften.
2. Add the diced tomatoes, stock drained and rinsed beans, thyme, and oregano a large crock-pot. Add the sausage and onion mix when things are browned.
3. Cook on low for 4 hours or so to let everything marry together. About 15 minutes prior to serving add the spinach and allow it to wilt, and then season liberally with cracked pepper and salt.
